
Paolo has been in kitchens from a young age in Sicily-Italy, enjoying family traditions such as the culinary arts on weekends and continually helping his mother and grandmother cook for large gatherings.
His experience working and managing restaurants began when his father bought a small Italian cafe. Paolo took on the responsibility of managing it when his father left for Venezuela, honing his ability to prepare all types of dishes, including desserts and other administrative activities to run a successful restaurant. At this point, his father nicknamed him "The Kitchen Wizard", "The Italian Coffee Wizard". Which Paolo was very proud of.
