Born into the lively heart of San Juan, Puerto Rico, in 1976, I, Josue Torres, found my life's calling amidst the sizzling sounds and enticing aromas of my mother's kitchen. My childhood was steeped in the rich culinary traditions of my homeland, where food is not just sustenance but a celebration of life itself.

At the tender age of 18, my passion for cooking guided me to the prestigious Instituto De Banca y Comercio credit for the Johson & Whales University in San Juan, Puerto Rico and Valencia Community College in Orlando, Florida, where I honed my skills and learned to weave my cultural heritage into every dish I created. Culinary arts wasn't just a study; it was an affirmation of my identity, an art form that I was destined to master.

After graduation, with a heart full of dreams and a determination as fierce as the Caribbean sun, I embarked on a journey to Florida. It was a quest for opportunity, a chance to spread my wings in a land brimming with possibilities. My beloved Karin, my wife, and our firstborn, Bryan, stayed behind in Puerto Rico, their love and support my anchor across the distance.

I began my career in the bustling kitchens of the Hilton, where the heat of the stoves was matched only by my fiery ambition. A year of hard work and dedication paid off when Karin and Bryan joined me, completing our family in this new land that was slowly becoming home. Soon after, we welcomed our second joy, Kadeisha, her arrival marking a new chapter in our lives.

My journey through the culinary world has been a tapestry of experiences, from the Hilton to Reunion Resort, from Hilton Ocala to Bongos in Disney Springs, and from the Rusty Pelican to where I stand today, at Fins at Sharky's in Venice. Each kitchen has been a classroom, each meal a lesson, each challenge a step towards the fulfillment of my aspirations.

For 26 years, I have been blessed to serve as a chef, a role that has allowed me to share my story and my heritage through the universal language of food. This journey is not just mine but also a testament to the love and sacrifice of my family, who have been my unwavering support system throughout these flavorful years.

As I continue to craft dishes that tell tales of my beloved Puerto Rico, I am reminded of the child who once watched in awe as flavors danced in his mother's kitchen. That child's dream has been realized, and each day I am grateful for the opportunity to do what I love.

Cooking has always been a way for me to connect with my roots and share a piece of my culture with others. From the vibrant colors of mofongo to the irresistible flavors of arroz con gandules, every dish I create carries a piece of Puerto Rico within it. It's like taking a culinary journey through the streets of Viejo San Juan or the beautiful beaches of Luquillo.

But it's not just about the food itself, it's also about the experience. I strive to create an atmosphere where people can come together, enjoy a delicious meal, and create lasting memories. Whether it's a special occasion or just a casual night out, I want every person who walks through the doors of my restaurant to feel like they're part of our extended family.

And you know what? The best part of being a chef is seeing the smiles on people's faces when they take that first bite and their eyes light up with delight. It's a feeling that never gets old and it's what keeps me passionate about what I do.
